Trim fat from thick chump chops and slit a pocket in each. Sauté chicken livers and shallots in 2 tablespoons butter until livers are cooked.
Mash livers to a smooth paste with lemon juice and season to taste with salt, pepper and curry powder. Stuff chops with this mixture and grill in usual manner.
