Ingredients

  • 4–6 baby lamb chops
  • 1 tablespoon olive oil
  • salt and freshly-ground black pepper

Method

Brush lamb chops with olive oil and season to taste with salt and freshly-ground black pepper. Dust chops with flour; dip in beaten egg and roll in dry breadcrumbs.

When ready to serve, sauté in butter and olive oil until golden brown. Garnish with watercress.
