Have your butcher trim a loin of baby lamb into 8 or 10 chops. Arrange them in a large, flat dish and season to taste with salt and freshly-ground black pepper. Add crumbled bay leaves, finely-chopped garlic, olive oil and dry white wine, and marinate chops in this mixture, turning them once or twice, for at least 2 hours.
Pre-heat grill for 15 to 20 minutes; rub grid with pieces of sue
