  • 2 egg yolks
  • ¼ level teaspoon dry mustard
  • salt and freshly-ground black pepper

Method

Combine egg yolks with mustard, salt and pepper in a bowl; mix well; then add olive oil slowly, drop by drop, whisking all the time with a fork or rotary beater until mayonnaise is of a good thick consistency. Add lemon juice and more salt and pepper to taste. This will make a more than sufficient quantity for the above recipe.
