Put raw veal, cooked ham and sausage meat through finest blade of your mincer 3 times. Sauté finely-chopped onion and garlic in butter until transparent. Combine minced meats and sautéed vegetables in a large mixing bowl; add thyme, parsley, and salt and pepper, to taste.
