  • 1 loin of pork (cut into chops)
  • 2 pounds sauerkraut, with juices
  • beer or water, to cover</

Method

Simmer pork with sauerkraut, beer, cumin seed (or caraway), garlic, and salt and freshly-ground black pepper, to taste, for 1 ½ hours. Stir in grated raw potatoes, moistened with a little cold water. Cook for 2 to 3 minutes more.
