Have butcher remove the rind from loin, leaving the fat. Mix softened butter, crumbled thyme and bay leaf to a smooth paste and rub well into pork several hours before roasting. Sprinkle to taste with salt and pepper, and let stand at room temperature to absorb flavours.
Place pork, fat side up, in an oven-proof casserole; add olive oil and
