Shell and clean lobster, shrimps or prawns (or skin and bone fish), and mince finely. Mince pork. Pound fish and meat to a smooth paste in a large mixing bowl with cornflour, sherry, soy sauce, salt, sugar and water. Make the paste into balls the size of large walnuts.
Heat the oil in a thick-bottomed frying pan until very hot. Then reduce heat; dip balls in batter and place in hot oil.
