  • 1 ½ pounds lean pork
  • ¾ pound fat salt pork
  • 1 clove

Method

Put meat through finest blade of mincer, or have it minced by your butcher. Combine garlic, salt, crushed bay leaf, ground allspice and coriander, to taste, with coarsely-ground black pepper in mortar, and pound to a smooth paste. Add this mixture to minced meat with egg, finely-chopped onion, thyme and finely-chopped parsley. Mix thoroughly and form into patties. Sauté patties in butter and ol
