  • 1 3½-pound chicken
  • ½ pound cooked ham, diced
  • 4 table

Method

Combine diced cooked ham, breadcrumbs, finely-chopped garlic and parsley in a bowl and mix well. Moisten with beaten egg; season to taste with freshly-ground black pepper and stuff chicken with this mixture.

Melt butter and olive oil in thick-bottomed, flame-proof casserole and sauté chicken until golden on all sides. Combine chicken stock and tomato concentrate and pour over chicken. C
