Cut chicken into serving pieces.
Combine flour, salt, pepper, finely-chopped parsley, tarragon, rosemary and grated lemon rind in a bowl. Combine beaten egg and a little milk in another bowl. Dip chicken pieces into egg mixture and then into seasoned flour. Chill.
Place butter and oil in a shallow baking dish and heat in a moderately hot oven (400°F. Mark 5) until butter sizzles
