  • 1 duck, cut into serving pieces
  • olive oil
  • 1 tin pineapple slices

Method

Place the duck, cut into serving pieces, in a roasting pan, and brush well with olive oil. Pour the juice from the tin of pineapple into the pan with the red wine, finely-chopped garlic, and salt and black pepper, to taste. Cook in a moderate oven (375°F. Mark 4) for 40 minutes
