Heat oil to 375°F. To make batter: beat egg in a bowl; add milk and beat. Add flour and salt and beat until smooth.
Clean and prepare cauliflower as above. Separate into small flowerets and poach in boiling water for 5 minutes. Dip flowerets into batter. Deep-fry until golden. Drain and serve immediately with tomato sauce.
