  • 1 pound new potatoes
  • 2-3 ounces softened butter
  • salt and freshly-ground black

Method

Peel and slice potatoes thinly and soak in cold water for a few minutes. Drain and dry thoroughly with a clean tea towel.

Butter a shallow fire-proof casserole or gratin dish and place in it a layer of sliced potatoes overlapping around sides of dish. Place a layer of sliced potatoes on bottom of dish in overlapping rows; spread potatoes with 1
