Ingredients

  • 4 large raw potatoes, peeled and grated
  • 1 Spanish onion, peeled and grated
  • 2 eggs, beaten

Method

Combine grated potatoes and onion in a mixing bowl; stir in beaten eggs, flour and baking powder and add salt and freshly-ground black pepper, to taste.

Heat a little butter and olive oil in frying pan. Drop potato mixture in spoonfuls and fry latkes until browned on both sides. Drain well.
