Cut off tops of artichokes and remove chokes.
Combine olive oil, dry white wine, finely-chopped garlic and onion, parsley, savory, salt and freshly-ground black pepper, to taste. Place trimmed artichokes in a saucepan just large enough to hold them and pour mixture over them.
Cover tightly and simmer slowly for 45 minutes, adding a little more wine and olive oil if necessary. Wh
