Scrape carrots and slice diagonally. Combine butter, olive oil, finely-chopped onion and garlic in a saucepan and sauté for 1 minute. Add sliced carrots, mushrooms and seasonings; cover saucepan and cook over a low heat for 10 to 15 minutes, or until vegetables are just tender. Stir in cream and season to taste.
