Mix flour, salt and eggs and a little water with a fork until pasta dough is just soft enough to form into a ball, adding a little more water if mixture seems too dry.
Sprinkle a large pastry board with flour and knead the dough until smooth and elastic (about 15 minutes) on this board with the flat of your hand, sifting a little flour on hands and board from time to time.
