  • 1 Spanish onion, finely chopped

Method

Sauté finely-chopped onion and garlic in olive oil until transparent. Skin, seed and coarsely chop tomatoes. Add chopped tomatoes, salt, pepper, brown sugar, and oregano, basil or marjoram to onion mixture, and simmer gently for 15 to 20 minutes.
