Mix flour and water in a large bowl. When well mixed, knead dough for 15 minutes. Cover with a damp cloth and leave for 30 minutes.
Combine minced pork with finely-chopped water chestnuts, Chinese mushrooms, ginger root, spring onions and sake (or dry sherry), soy sauce, oil and freshly-ground black pepper to taste.
