Cook rice in boiling salted water for 15 to 18 minutes. A few minutes before rice is done, gently sauté garlic and sage in butter, being careful not to let butter become brown. Discard garlic as soon as it becomes lightly golden. Drain rice and place in serving dish. Stir in cooked strained spinach or watercress, and pour hot butter over it. Mix well. Sprinkle with cheese and serve.
