Wash and prepare lettuce and watercress. Shake dry in a salad basket, or dry each leaf carefully in a clean tea towel. Wrap in tea towel and allow to crisp in refrigerator until ready to use.
Rub wooden salad bowl with cut clove of garlic. Arrange lettuce and watercress in bowl. Chop garlic and chives finely; sprinkle over the salad and dress with an olive oil and wine vinegar dressing
