  • 1 pound cooked new potatoes, diced
  • ½ pound cooked string beans, sliced
  • 4-6

Method

Combine diced cooked potatoes with sliced cooked string beans and carrots and cooked dried beans and peas, reserving a few of each vegetable for garnish. Moisten with wine vinegar and olive oil and season to taste with salt and freshly-ground black pepper. Toss and chill.
