Italian Tuna Salad


  • 1 head lettuce
  • 4 boiled new potatoes, sliced
  • 4 ripe tomatoes, sliced
  • 4 black and 4 green olives, quartered
  • 2 stalks celery, sliced
  • 1 tin tuna fish, flaked
  • salt and freshly-ground black pepper
  • 2 tablespoons lemon juice
  • 4-6 tablespoons olive oil
  • 1 tablespoons chopped anchovy fillets
  • 2 tablespoons finely-chopped parsley


Line a salad bowl with leaves of lettuce. Place a layer of sliced potatoes on this; top with a layer of sliced tomatoes; sprinkle with quartered olives, sliced celery and flaked tuna fish.

Make a dressing by combining lemon juice, olive oil, chopped anchovy fillets and parsley. Season to taste with salt and freshly-ground black pepper and pour over salad. Just before serving, toss.
