  • 1 pound button mushrooms
  • juice of 1 lemon
  • 8 tablespoons

Method

Remove stems from mushrooms; wash and dry caps but do not peel. Slice caps thinly, arrange them in a salad bowl and pour well-flavoured lemon and olive oil dressing over them. Toss carefully and chill in refrigerator for 2 hours before serving. Sprinkle with chopped chives and parsley.
