  • 1 red cabbage (about 2 pounds)
  • tarragon vinegar
  • salt and freshly-ground black pepper

Method

Wash cabbage leaves and shred them. Blanch strips in boiling salted water. Drain; place in cold water; then drain again. Allow to marinate for at least 1 hour in tarragon vinegar with salt and pepper, turning from time to time. Remove and drain.
