  • 4 ripe dessert pears

Method

Peel, core and slice pears.

To Make Sauce

Combine olive oil, vinegar, finely-chopped mint and parsley in a mixing bowl. Season to taste with salt, freshly-ground black pepper and a little dry mustard. Mix well.

Toss pears in vinaigrette sauce and serve on lettuce leaves.
