  • 6 ripe oranges

Method

Peel oranges, removing all pith, and slice crosswise.

To Make Sauce

Combine olive oil, vinegar, finely-chopped olives, onion and herbs in a mixing bowl. Season to taste with salt, pepper and cayenne. Mix well.

Toss orange slices in vinaigrette sauce.
