  • 1 level dessertspoon powdered or granulated yeast
  • 4 tablespoons warm water

Method

Dissolve granulated yeast thoroughly in warm water in a bowl and add sugar. Cover the mixture with a warm towel and put in a warm place for ½ hour.

Sift flour, icing sugar and salt into a warm mixing bowl. Add vanilla essence and grated lemon rind and mix well. Make a well in the centre of the flour and pour in the yeast mixture. Stir well, incorporating as much flour into the mixture a
