  • 4 ounces castor sugar

Method

Combine eggs, sugar and vanilla or grated lemon rind, and whisk mixture in the top of a double boiler until it is very light and thick and lukewarm. Transfer mixture to electric mixer and beat at high speed for 3 to 5 minutes, or until mixture holds shape.
