  • 3-4 bananas, mashed
  • 2 ounces sugar
  • pinch salt
  • 6-8

Method

Combine mashed bananas, sugar, salt, pineapple and lemon juices and rum. Fold in the cream. Turn into a freezing tray. Freeze in the freezer compartment of the refrigerator until firm. Turn into a bowl and whisk until frothy. Fold in chopped toasted almonds; return to tray and freeze until set.
