Frozen Banana Cream

Name: Frozen Banana Cream
Yield: Serves 6 to 8
Ingredients: pinch salt; 6-8 tablespoons pineapple juice; 3-4 bananas, mashed; 2 ounces sugar; ½ pint double cream, whipped; 2 tablespoons chopped toasted almonds; 2 tablespoons lemon juice; 2 tablespoons rum

2 ounces sugar

Method

Combine mashed bananas, sugar, salt, pineapple and lemon juices and rum. Fold in the cream. Turn into a freezing tray. Freeze in the freezer compartment of the refrigerator until firm. Turn into a bowl and whisk until frothy. Fold in chopped toasted almonds; return to tray and freeze until set.
