Ingredients

  • 1 pound dried apricots
  • 1 orange (rind and pulp), finely shredded
  • 4 ounces

Method

Rinse apricots well and put them in a saucepan with shredded orange pulp, rind and just enough water to cover. Simmer gently, uncovered, for 15 minutes. Stir in sugar and continue to cook over a very low heat until most of the liquid is absorbed and the apricots are cooked through, adding more water if necessary.
