Green Mango Scallops

Ingredients

  • 8 raw diver scallops, thinly sliced horizontally
  • 2 tablespoons clear honey
  • 2 tablespoons nam pla (Thai fish sauce)
  • 2 tablespoons of lime juice
  • 2 green mangos, peeled and finely diced
  • (if unavailable, use tart green apples)
  • 2 tomatoes, skinned and finely diced
  • 1 bunch of spring onions, finely sliced
  • 2 tablespoons finely chopped coriander
  • 2 tablespoons finely chopped lemongrass
  • 1 teaspoon finely chopped garlic
  • 1 teaspoon finely chopped red chilli
  • sprigs of coriander, to garnish

Method

Place the scallops on 4 chilled plates. Mix all the remaining ingredients together and add to the plates. Serve, garnished with coriander.
