Indian pudding now means a spiced cornmeal pudding sweetened with molasses, but in the early days it referred to any pudding made with Indian meal (i.e., cornmeal). Amelia Simmons gives three versions, the first sweetened with sugar and raisins, the second similar to the modern one, and the third a mixture of milk and meal that was probably only lightly sweetened and intended to be served with meat.
