For the Tenderloin

  • 1 whole beef tenderloin (about 5 pounds)
  • 3 to 4 tablespoons extra-virgin olive oil

Method

  1. Prepare the tenderloin as shown in Preparing the Meat, Steps 1 through 5.
  2. Transfer the tenderloin to a baking sheet and generously drizzle oil on it. Sprinkle the meat with salt and pepper and thickly coat it with the garlic and chopped herbs, patting these onto the meat with your fingertips. You can cook the tenderloin
