  • 4 pounds short rib steaks
  • teaspoons coarse salt
  • teaspoons black pe

Method

  1. Place the steaks in a baking dish and sprinkle both sides with the salt, pepper, oregano, and hot pepper flakes. Pat the seasonings onto the meat with your fingertips. Drizzle the meat on both sides with oil and sprinkle with the garlic. Let marinate in the refrigerator, covered, for as briefly as 30 minutes or as long as 2 hours—the longer, the better.
