You could cook the chops by the direct grilling method for the whole time, tossing the wood chips on the coals under the pork or, if using gas, placing them in the smoker box or a smoker pouch. In this instance, you’ll need to grill the chops 6 to 8 minutes per side.
The maple-cinnamon butter would make a luscious topping for the chops.
