For the Ribs and Marinade

  • 4 racks baby back pork ribs (about 4 pounds total)
  • 4 stalks lemongrass, tr

Method

  1. Remove the thin membrane from the back of each rack of ribs as shown in Preparing the Meat, Steps 2 and 3, or have your butcher do this for you. Arrange the ribs in a large nonreactive roasting pan.
