Trim the excess fat off the chops as shown in Preparing the Meat, Step 1 (leave a little on), and arrange the chops in a baking dish. Combine the Sichuan peppercorns, coriander, salt, pepper, and five-spice powder in a small bowl and stir to mix. Sprinkle this rub over the chops on both sides, patting it on with your fingertips.</
