Ingredients

  • 2 to 3 pounds mixed onions, such as large sweet onions (Vidalias, Mauis, Walla Wallas, or Texas sweets), red onions, cipollini, pearl onions

Method

  1. If using large onions, peel and cut each one lengthwise in quarters or cross-wise into ½-inch slices. Skewer as shown in Preparing the Onions, Step 1. If using cipollini or pearl onions, peel and thread them on toothpicks or bamboo skewers. If using shallots, cut them in half. If using green onions, cut large ones in half l
