The peppercorns and pepper flakes in this rub give it a good “ouch” quotient. This is exactly what you want when a steak or pork chop calls for a spice mix that bites back. This is a baby ouch, but you could certainly up the ante by adding more hot pepper flakes or black peppercorns. Use 2 to 3 teaspoons per pound of meat. A 4-pound chicken will take 1½ to 2 tablespoons.
