Mustard goes great with grilled sausage, ham steak, pork chops, and other rich meats. Perhaps that’s the rationale behind the mustard barbecue sauces that are popular in Georgia and South Carolina. Serve this version with any type of barbecued pork. It’s not half bad with chicken, either. To be strictly authentic, you’d use yellow ballpark mustard. But I like the punch of a Dijon mustard or a grainy mustard from Meaux.
