Blue cheese sauce was popularized in Buffalo, New York, as an accompaniment for spicy chicken wings. My own contribution to the tradition is a sauce made with that powerful aristocrat of the European blue cheeses, Italian Gorgonzola. I like to serve this sauce with the East-West Buffalo Wings on, but you could also use it as a dip for grilled shrimp or vegetables.

Incredibly easy to make. I was initially sceptical about blue cheese with chicken wings (it's not really a Brit thing!!) but I am now a new convert as it worked really well with Steven's wings. As he also recommends it would taste great with veg or grilled seafood.
