Salmon has a natural affinity for mustard and dill—a combination appreciated by millions of Scandinavians, who add dill to their gravlax and serve mustard sauce with their smoked and cured salmon. Both cut the oily richness of the fish, as does lemon—my own addition to the tradition. Serve this sauce with the Whole Salmon with Lemon and Dill. It’s also delicious with grilled chicken or Turkey Pastrami.
