This sweet, nutty peanut sauce (or any one of a hundred variations) is the traditional accompaniment to the satés (tiny kebabs) of Southeast Asia. As well as being good with any type of saté, the sauce goes well with the Garlic Halibut. Unsweetened coconut milk is available in cans from Asian markets, gourmet shops, and most supermarkets. If you can’t find it, substitute equal parts of heavy cream and chicken broth.
