The basic Tex-Mex relish, pico de gallo is easy to make, but you must use juicy ripe red tomatoes and crisp white onions to get the full effect. Of course it goes with Beef Fajitas, but you can serve it with any kind of grilled beef or even quesadillas.

Ingredients

  • 1 clove garlic, minced
  • ½ teaspoon coarse salt, or more to taste

Method

Place the garlic and salt in a medium-size nonreactive mixing bowl and mash to a paste with the back of a wooden spoon. Add the remaining ingredients and gently toss to mix. Taste for seasoning, adding salt or lime juice as necessary. It will taste best served within a few hours of being made.
