This crisp, colorful relish exists in many incarnations throughout the world of barbecue. The cool, moist crunch of the cucumber and onion provides a welcome contrast to the flame-charred taste of grilled fare. Thai in inspiration, this one is perfect served with the Lemongrass Beef Satés or the Chicken Satés.

Ingredients

  • 1 cucumber
  • ¼ cup sugar, or more to taste
  • 1 clove garlic</

Method

  1. Peel the cucumber, removing the skin in lengthwise strips; leave a little skin between each strip. Cut the cucumber in half lengthwise, remove the seeds with a spoon or melon baller, and cut the cucumber flesh into ½-inch dice.
