Placed the papaya and mango in a medium glass or stainless steel bowl. Cut the oranges and lime in half and squeeze juice over the fruit in the bowl, removing any seeds which drop onto fruit.
Add minced pepper, onion, chiles, and cilantro to the bowl. Sprinkle with salt and sugar, mix well with a spoon, and let marinate for 30 minutes. Put in chilled serving bowl to pass at the table.</
