Recipe loaned to me by a woman at a Jerk Restaurant near Montego Bay, Jamaica. She wrote it down on the back of a brown paper bag, then put my take-away order in the bag and wished me “Good eatin’ Mon!” She did not have amounts of the various spices, “I do it by what feels good,” she related, “so just makes up yo’ own.” Have a fire extinguisher ready . ... this is hot stuff!
