In 1999 the Swine Fellows won FIRST PLACE in “Cooking From The Home Land” competition at the Jack Daniel’s World Invitational Barbecue Competition, in Lynchburg, TN., using this smoked rabbit recipe. They won the competition in 2000, 2001 and 2002 with different recipes.

  • 1 cup finely chopped pecans

Method

Start the charcoal in the smoker or barbecue and bring the temperature to about 200°-225° degrees F.

Mix evenly the maple syrup, pecans, mustard, allspice, salt and pepper in a glass bowl and cover it. Let the mixture stand for 48 hours at room temperature. Drain in colander and reserve the liquid to a small bowl for basting. Save the pecan mixture for the stuffing.
